Does anyone know where I can buy fog light housings with projectors built in for a MK6 GTI?

They don't make them you'd have to retro fit a set of projectors in the fog housings.

You do not need projectors for fogs, go with bright 9000lumen LEDs - these are brighter and spread light further down the road and on the sides:
