What are the gaps of the plugs set for? You might try bumping them down by 0.1mm from where they are (roughly); (0.8mm)0.031" down to (0.7mm)0.028"__or 0.028" down to (0.65mm)0.025".

I would say (for a really good power bump and for the sake of some level of civility); consider staying away from the hpfp upgrade. A stage up in tuning for an HPFP will give the most bump in power, but it will also shorten the cam follower (CF) lifespan more than with just a stage 1 tune. And...

Could be coils...yes, because it is common and matches its symptoms.
Could also be the tank pump or failed fuel supply bits. Look at rail pressure data to see if its pressure drops significantly. If so, you may need a gauge to test what is happening with its pressure in the direction of the LPFP.
