2012 water pump getting weak?

My 2012 GTI has ~85k miles on it. last summer I saw this happen ONCE; driving in hot weather the temp gauge crept about half a notch over 190 and then when I slowed it dropped back to 190 and never moved again. This past weekend (very hot days in the Kansas City area) it would creep up past 190, i'd turn the AC off and it would settle back to 190 (after blowing some plenty warm air in to the cabin). It would do this consistently (probably 4 or 5 times on the road trip) where I would turn the AC on to get cool... the temp would creep up past 190 a bit... I'd turn it back off and it'd relatively quickly return to 190. I did let it get up to two notches past 190 before turning the AC off once, but it still fairly quickly returned to 190 after turning it off.

I am trying not to over complicate things... but this seems like the cooling system in general just lacking performance. I haven't heard of our water pumps "getting weak"... More so just having catastrophic failures. And so I hate the idea of changing it just to potentially cause more problems lol. But just curious if others have thoughts prior. Do our thermostats get weak? Could old coolant just be contributing to lack of performance? etc. open to any thoughts. Coolant level is fine for what it is worth.

flushed fluid this past weekend... will try to report back if the temp rise continues just in case others stumble across this thread in the future lol... maybe get it somewhat useful 🤷‍♂️
