So I have an '11 tdi with touchscreen and I can connect my bluetooth for music and phone. However, I can't change the song from the bluetooth, i have to change it via the phone. I had a loaner of a 2013 passat and I could change the song via the the touchscreen. Is there a software upgrade i can get on my 2011 to get this feature?

Don't quote me, but I think it's a hardware issue.
My 2011 GTI was the same and my 2013 Golf R works.
Just got my 2013 GTI, and it (per link) appears to be a HW issue.

One question:
I'm digging the phone controls in the dash. Is that tied to the head unit? If I replace the head unit with an aftermarket deck, will I lose this functionality?
