So it turns out that tightening down my 17z caliper onto the spindle is not what the issue was... there truly is a discrepancy in the clearance of the rotor and the caliper.
This happens on both sides, by the same amount.

This is the video I recorded earlier today.
Essentially, the caliper is off center in comparison to the rotor by a small margin (about 1.5mm). This may mean I need to have the mounting tabs machined down 1.5 mm on both sides so that the spacing between the two pads is equal.

I think it the rotor might be off center because you've got it held on by a single lug. Try putting the set screw in maybe and see if it aligns
No set screw with these... I'm dead sure they're the right rotors... Maybe the video doesn't show it, but I have two lugs in... tightened all the way down, and still no difference.

So I spoke with Rob from Rotorlab for about 35 min. Good guy.

The issue I'm getting is not the fault of the machined tabs... the issue is bearing runout on my wheel bearing/hubs...
They've taken a big beating having been driven in the northeast (haven't replaced them since I got the car and doubt previous owner replaced them), and you would never notice because the original calipers are sliding and compensate for any extra space that's given to the rotor, however now that I have a monoblock caliper, I notice the 2ish mm of runout that push the rotor out just that little bit... This causes the outboard pad guide rods to hit the outside face of the rotor...

This also makes sense with why both the fronts are identical with the mounting issues (bearings are usually replaced in pairs)...

So what am I doing about it? Ordering new wheel hub bearing assemblies... Hopefully I can take out the old and likely corroded and shitty bolts by the time they show up and have them in soon before I move to TX.

@manu97 the audizine guy had the same issue (for some reason only on one side) but articulated it differently.

In addition, Rob explained to me some extra instructions (which I'm shocked weren't provided with the dual rear caliper kit that I bought from ECS) on how to properly set up the rear parking brake caliper. You basically have to get in the car and push the button down on the handbrake while pumping the crap out of it until the piston meets the backing plate of the pads, at which point the handbrake is essentially (calibrated) for the distance to the pads.

Did you have to swap the master cyl since the bigger brake cyls need a larger fluid volume?

Took out the old hubs today... took me much less time than anticipated... probably around 20 min each side...
I hope to have the new ones in tomorrow.
Sadly I have to wait until Monday/Tuesday for new dowel pins to arrive for the rear pads (the pads I bought didn't come with it).
Ideally I'll have everything done by then so I can just slot in the new pads and boom, get back on the road.
Bleeding all the brakes will be a bit of a bitch. I'm also going to bleed the clutch (since I did the MC), but that seems much easier than the brakes.
Praying for no leaks as that would set me back a lot more time and would mean I have to delay my move to TX, or it means I have to fly there and road trip the car back down at some point.
