Is it possible that you have the sensor plugs attached to wrong sensors?
For instance, coolant temp sensor connected to air intake sensor plug and air intake temp sensor connected to coolant sensor plug.
We know that both sensors use a 2-pin connector and both have a similar design, so maybe the sensor plugs are able to connect properly to either sensor. This is also assuming the coolant temp sensor wires that you extended would allow its sensor plug to reach the air intake temp sensor.
Coolant Temp Sensor Connector:
Pin 1 - yellow wire
Pin 2 - brown wire
Air Intake Temp Sensor Connector:
Pin 1 - white wire (sometimes black or red)
Pin 2 - brown/blue wire (sometimes brown)
This is all the info I have and only thing I can think of other than broken wires somewhere in the harness.
