What do you guys do to ensure your engine is running healthy?

OP, don't need to change the motor oil. It will replenish and clean itself after hard driving.

Always drive below 1.2k rpms to keep the engine lazy.

Scan the car with VCDS on a weekly basis to check for codes.
Check coolant and oil levels regularly along with tyre pressure.
Top up petrol and Water-Meth weekly.
Drive the car gently until oil temp reached 80 degrees Celsius.
I let the car cool down for a bit if I've driven it hard before I switch off the engine.
Oil changes every 7500km with 5W40 full synthetic.
DSG oil changes every 30,000km.
New Spark Plugs with every oil change.
Inspect the engine bay for anything out of the ordinary (oil seepage, loose connectors etc).
Generally keep the car and engine bay clean and tidy.
