So I was replacing my infamous subframe bolts and noticed this bolt sitting on top of my subframe. Anyone possibly know where it goes

That type of bolt is used in a few places in the engine bay to hold various brackets and similar items. For example, turbo heat shield to head (my best guess, especially if the bolt was found at the front/center of the subframe), turbo support bracket (also likely), coolant & oil hard lines to head, etc.

If I were you I would save it but not worry too much. Someone working on the car probably dropped it while removing/installing, couldn't find it, and either replaced it or decided it wasn't important enough to replace.
