Burning about 1 quart every 500 miles

Rings should not be going at 74k miles. The turbo on the other hand could. My turbo on the TDI went at 90k. Catastrophic failure. Boom. It's hard to say on the turbo as the intercooler is likely full of oil anyway as this is pretty normal on the GTI and TDI. If it were blowing smoke you could figure oil was making it into the exhaust manifold via the turbo but it could also be going into the intake via the turbo depending on where it was leaking. If you want to rule out rings or valves take it and have a leak down test done. Shouldn't be too pricey for that. And that is the definitive test for the rings and valves.

Also check your rear main seal peek hole at bottom of transmission with it off, any oil in it or dripping out here?

Update: never had a chance to do leakdown test or get a new PCV, but oil consumption seems to have remained the same. Also notice slight amount of white smoke on really hard acceleration but was told that could just mean my engine is running rich.
